I’ve always thought about just refusing to take additional workload until HR hires someone else. Like, just let work go undone.
Unfortunately I know that just means I’d be reviewed as “does not meet expectations” and eventually shown out the door.

My parents also have very archaic ideas about employers. They're actually loyal, to a fault, to employers who don't give a shit about them
