I've not been great at big Texas style platters and needed to focus on preso.
Brisket. Beef ribs. Pork ribs. Pulled Pork. Chili Cheese beef snags. Mac n cheese. Traditional potato salad, and fancy candy pecan mustard potato salad. Plus all the trim.
Smoked it all in a 1000 gallon Texas style offset in Perth, Australia. Just Salt and pepper mostly for the rub.
Everything about this is fantastic and your presentation is great. That meat looks so succulent. Hopefully your pics will be a big draw when you reopen and I wish you the best of luck. My only negative comment would be, "why are you literally on the other side of the planet to me, argh!".
