Fry them twice. First at about 260 degrees F (127 degrees C) , the second time try around 400 degrees F (204 degrees C) . The first time you cook the potatoes, it’s called blanching. Second time makes them crispy.

Edit 2: added temperatures in Celsius to share the love with everyone.
Edit 3: for the first time of frying cook until the fries are translucent. For the second fry I recommend frying until fries are golden brown. If you wish for a crispier fry cook for slightly longer.

Edit 4: In between the two fryings there is no set time in which the fries must sit. Only wait until the oil is back up to the second frying temperature. 400 degrees F or 204 degrees C.
Edit 5: You can blanch fries in salted water too, the process of blanching is to cook the fry throughly before crispening the outside.
