I was listening to an old Anthony Bourdain interview that was done in 2010 I think by r/MarcMaron/.
He said if it wasn't for Mexican's and other Latin American folks coming up here the entire restaurant industry in the US would implode. I think it's a very valid point.
Edit: FYI, I never said anything about "illegals" I simply mentioned that immigrants form the backbone of our restaurants. While yes they are underpaid, many legal immigrants go on to make their own places or become sous chefs or master chefs. It's a ladder and all ladders must be climbed by the willing.
