An important point of clarification is these arent dangerous levels of Vitamin C, if you consume too much you piss it out as it is soluble in water

Isn't vitamin C damaged by heat / boiling water? This would reduce significantly the content of available vit. C in broccoli and potatoes (since they are mostly consumed cooked), and in tomato and pepper according to how they are used.
