We visited Shirakawago in January a few years ago. Covered in snow it looked like gingerbread houses! Serious fairytale scenery. If I recall correctly, there are no hotels, only home stays, and you can only stay one night at a time (maybe it was just a super busy time of year!). Buses pour in full of tourists throughout the day, so staying over and getting up early to explore the town while it was still quiet (and stepping in all that fresh powder snow!) was amazing.
