for those that are interested in the recipe:

cut pork belly in squares (eg: 1in x 1in) or close as possible. the meat will lose moisture and shrink so best to start with a larger size, but its entirely up to you. salt the meat and cover with your favorite bbq rub. i just used a Memphis dust variation. (Meathead's Memphis Dust Rub) set smoker to around 275F and use your favorite wood. i used apple chunks. smoke until just before fork tender. about 2 hours at 275F. keep cooking longer if not tender yet. then wrap the pork belly in foil with half stick of butter (sliced) and a nice pouring of honey on top. put the wrapped belly on the smoker and cook for another 2-3 hours. after 2 hours, open up and check on tenderness. i would stick a fork in it and see how easily it goes through. once its fork tender, open up the foil and let cook for another 1hr or so to let it caramelized. cook for as long as you want to get that extra dark caramelization take off and let rest and eat!
