My grandmother made these for the family and she tells us they have a name but she just calls the christmas turtles. She got the recipe from her great grandmother in law who moved to the states from Italy. They had a hazelnut and chestnut filling with chocolate and espresso. She told me normally they would glaze them with honey and put sprinkles on them. The last time she made these was 30 years ago.

I’m fascinated! Would you be able to post a picture of the mold(?) that gives them that shape?

Are they filled after frying, like jelly donuts?

They look like pasticelle (these ones even have the sprinkles!). This recipe says they're filled with coffee, cocoa, chestnuts, almonds, and fruit peel, although I'm sure there's some regional variation.
