If their people don't look photorealistic you bet your ass it's for effect and artistic expression, definitely not for a lack of ability.

Many of the pixar shorts are (also) technological proofs of concepts that contain elements developed for upcoming movies:

Bounding: Realistic fur For the birds: Feather control (used for Nigel in Finding Nemo) Partly Cloudy: Fog control Day and Night: Combining traditional animation with CGI and of course: Luxo Jr.: Proof that CGI characters can convey emotion.

My teacher had a student who worked for Pixar in animation and all they had him do was work on dust. The amount of detail that goes into these movies is insane
