You know the guy who wrote Hatchet (and the four subsequent sequels which were all great books) Gary Paulsen? He wrote a book about his experience running the Iditarod race in Alaska. It's a hilariously wonderful book about a topic I knew little to nothing about.
Anyways he writes about the Yukon (I think it was the Yukon, I may be wrong) part of the race where the cold is unbelievable. He described it like an ancient, deep cold that settled into you. A cold that you could never have imagined. It was written so well that I stopped underestimating the cold from then on whenever I went out.
TL;DR: Read Gary Paulsens work, it's amazing, he describes the cold aspect of Iditarod really well
