This isn't playing with the saturation, its just photoshop. Here's some example of what the photographer does with images: https://www.youtube.com/watch?v=RtBBrHSfbDI He then tacks on a description that matches the fantasy. The owl was not originally colorful, and it was clearly not "found" in a forest as his photo description says.

Barn owls (Tyto alba) really look more like this.
