I remember the first time I had gyoza. My Japanese host family filled their whole low table with the circle-shaped dumpling wrappers and 'Mama' put the filling (pork) in the center of each circle. Then we kids had the job of folding them up. Host 'Papa' explained it's good luck to have exactly six folds in the crimped edge of each dumpling. Mama fried them all in rows, close together, so they could be flipped all at once. I believe we dipped 'em in ponzu and ate them with the obligatory bowl of rice. Miss those days (and that family), was the best time of my life! Thanks for reminding me, I hope you liked 'em!
