This is the ‘Non-slip Loop Knot’. While I prefer the Palomar for most purposes, It’s a variation on the classic ‘Clinch Knot’ and a very popular knot for fishing.

The knot shown leaves a fixed loop at the end, which provides more action to lures such as Crankbaits.

Edit 1: I originally guessed it was the ‘Trilene’ knot, which has a second loop trough the eyelet. Other, more observant fellow Redditors actually deserve the credit for providing the correct name.

It’s great for Mono, but works with most lines.

Edit 2: I don’t mean to imply that the Palomar is very similar to this knot; it’s just the one I use most often. The Palomar is faster to tie, runs two loops through the eyelet and clinches tight to the eyelet. Neither are better or worse, just different.

This knot is specifically for use with monofilament, designed to avoid any sharp bends, which weakens the line, and thus the knot.

Obviously it works for just about anything else too, it's just especially good w/ that.
