One thing I've picked up from our Mexican brothers and sisters is Mojo de Ajo. I make a batch every 6 month so there's always a bottle of the shit in my house. It will effectively turn anything into Garlic-anything. I put it on plain pasta, I put it in rice, i put it on steamed veggetzbled, salads, I put it on my toast, and yes, I put it on my grilled cheese too.
