Recipe: 1/2 cup margarine 1/3cup white sugar 1/3cup brown sugar 1 egg 1 tsp vanilla 1 cup 3tbsp flour 1/2tsp baking soda 1 cup semi sweet choc. Chips marshmallows
Mix flour and baking soda together In separate bowl cream margarine and sugars together, then add egg and vanilla, mix well Slowly add dry mixture until just mixed Add choc chips. Drop few inches apart on baking pan (I usually do 8 cookies ins batch, 2 batches) Bake at 350 until golden brown on bottom (8-10min), these end up soft baked, let cool on baking sheet for a few minutes before moving to cooling rack. Once all cookies are baked switch oven to broil. Place half the cookies upside down on baking sheet and place a marshmallow on each one and broil, this goes quickly, once marshmallow toasts on top take out immediately, lightly press the remaining cookies on top and squish down, move to cooling rack.

Makes about 8 sandwich cookies.
