I remember a while back either on a show he hosts or on facebook that Alton Brown's secret to gooey brownies is to bake them for 15 minutes, take them out for 15 minutes, then put them back in for the remainder of the 35 to 40 minutes. I've never tried it, but I trust that man undoubtedly when it comes to culinary technique.
