This recipe is always a go-to when a bunch of us go camping. Dice up four yellow potatoes and a half of a large sweet onion, and mince three or four cloves of garlic. Throw this all in a ziploc bag and add (to taste): olive oil, salt, pepper, smoked paprika, cayenne, fresh thyme and fresh sage, then mix it all up in the bag so it's all evenly coated with spices. Then, heat up a cast iron pan over the fire and chop up half a pound of bacon into small squares. Add the bacon to the pan and let this get crispy, drain out most of the fat (leave some to help cook and flavor the potatoes) and add the potato/onion hash you made in with the bacon. Then, once the potatoes are soft and everything's getting a little crispy, make a well in the middle, add just a tiny bit of butter to keep the eggs from sticking to the cast iron, and crack four eggs into the center of the pot. Once those are cooked through, add cheddar cheese to the top of it and it's done!
