This is what my mom cooks me for birthday dinner every year. Better than a prime rib, in my eyes. She knows the right cut to get, the same one she's been getting my whole life. I'm 50 and she's 75 and she is the best cook I know, still. After dinner, she and I both head into the kitchen to "clean up" ... the bits of crackling all over the pan, and peeling it off what's left of the roast ... the rest of the family has never understood what they're missing. Ha!
