Cut off the wings and legs at the joints and lay them aside. Put a long knife or carving fork in at the top to hold the bird with. Make a cut at one side at the bottom towards the center of the bird, to sever the bottom of the meat from the carcass. Then cut thin slices straight downwards moving in Repeat for the other side. Once you've finished, there are a couple of round pieces of meat on the underside as well that are well worth harvesting.
