If enough people do this, it makes a point. Does it accomplish anything significant? Probably not. But it's a low-effort, low-risk demonstration of dissatisfaction if the point gets made (for the record, I doubt it does).
What would really be effective is to specifically target things like:
Black Friday Cyber Monday Holiday shopping in general Summer road trips.
Instead of some arbitrary day when people don't spend anything, pick times that the corporations are expecting large amounts of revenue, and undercut that as much as possible.
Short of cutting all non-essential spending for an extended period of time, that's how you make this point more effectively.
