When I was young, I enjoyed the challenge of harder difficulties. I had almost endless hours to try and fail. As an adult with responsibilities, I just want to relax and enjoy the game without struggling on some part. So I always play the medium difficulties.
I enjoy the newer Fire Emblem games so much more now that I can turn off permanent deaths.

Some games have really good stories and I dont want to spend hours trying to beat a boss just to see the next part.
Also it's fun being an overpowered little shit.
If I want a challenge I usually just go for a fighting game. No talk. Just punch.
