I had my kitchen modified to be more accessible for my wheelchair. The sink is where it matters most.

Can confirm. My spouse is in a wheelchair and when we set up the kitchen, she told me where everything goes. As a part of our daily prep when I go out of the house, I check in with her on what ingredients to get out for her culinary adventures for the day, and she's got everything within reach to go to town.

She just tosses the mess in the sink, or fills the pots with water and I clean up her mess when I come home and prep dinner.

I remember years ago reading an advice column by a woman whose daughter was quite short. The daughter was having a house built and was wanting to have it built to be convenient for her own height. The mother was concerned that this would hurt resell value of the home.

Several readers wrote in about their experience with exactly this, and they said that, for them, it really helped resell value because there are more short people than homes built for them.
