Giant Tortoise wasn't properly named in the scientific system because they were so delicious. People kept eating them before the scientists could have a look
Now don't quote me on this or think of me as a scholar.
But according to this article and a quick search on google, we didn't actually hunt them to extinction.. well directly, it's noted and theorized that while some were definitely hunted, their extinction is contributed to us:
introducing new wildlife to the area which became predators to the dodos like dogs.
animals such as rats destroying their nests.
and probably depriving them of their natural habitats and their food.
