Obligatory Valentine’s Day lobster dish!

My GF loves this particular dish and it was asked of me for v day so here it is!

The cream sauce is made with shallots, garlic, thyme, fennel, white wine, lemon, dried Morels and the water used to reconstitute them, sautéed with the lobster shells for added flavor. Heavy cream is added later once everting has been cooked down a bit. After the al dente pasta goes into the cream a good heap of grana padano cheese was thrown in as well.

The lobster was par-cooked and then Lightly poached in butter and wine.

The pasta is a 50:50 00 and semolina egg pasta.

All in all it was a lovely valentines day with some yummy food!
