I seen so many backgrounds that start with I was this epic leader of my clan who battled dragons and monsters while also being level 1 which makes no sense whatsoever

I'd rather a nice fleshed out backstory that speaks to character motivations, and maybe gives some backstory npcs for a dm to work with, but I abhor the "epic" backstory where the character has pretty much saved the world already and somehow it still only lv1!

I usually have a backstory where the character has just finished their training in whatever discipline is appropriate and talk about their personality, family connections and anyone else who played an important role in their life so far.

Kinda depends. If you put like personality things or family members there it can easily get bigger than that. If "Background" is just a description of things they have done you are correct.
