Farming Simulator needs an arcade mode. It’s overly complicated. I’m sure there’s an audience for that, but an add on or bonus mode for simulator lite would be perfect.
Though the graphics aren't usually on par, you might look into games like feudal: your own. Its a single player game where you level land, cut trees, build a house, plant food, hunt animals, etc.
Really a lot of survival games might meet your needs. If you also wanted to fight zombies: 7 days 2 die. Other players: feudal online, or conan exiles (conan solo or with 3 or 4 friends is also awesome).
On the flip side, you have graveyard keeper (adult spooky stardew with more fighting), project: zomboid (survival horror from a stardew perspective, make a base plant crops) or even stay alive (cthulu mythos survived builder.

The reason why Stardew works so well is because it’s very simple visually. Animations would take too damn long in 3D.
