It doesn't need to be a knife, as long it "looks" like a knife. Anything could like a knife to be honest.
Imagining if you are eating a chocolate ice-cream and a police stopped you and saw the pointed cone facing downwards. The police saw the cone and in panic misidentify it as a knife and give you like 1 second to drop the "knife".
Of cuz you didn't do anything because you are not holding any knife and confused with the officer's command. The officer shoots your point blank later.

I remember one story where the cops said the guy had a knife on him. He was an art student who had an X-acto knife in his backpack.
Cops love to portray things in their favor and twist things to make their victims look bad.

Carry a knife on me every day and actually use my knife at work. It’s a useful tool. And being able to open that knife with 1 hand, is invaluable.
