After SARS research into Corona type Animal transfer virus' skyrocketed. If you were a bat field biologist you literally became a commodity in getting samples. There was a very large expensive campaign to stop the South Pacific Island chains from eating bats because it was a large mammal protein source, but the risks were there. Covid came from a non-bat species but the research community in general was hyper focused on discouraging eating wild animals in the region. Most knew though it was a matter of time. Can't catch em all.

A couple years ago I did read an article by some scientists claiming that we were long overdue for a pandemic, and that the epicenter would be in China. Wish I could find it.
