If I remember Christopher Lee himself suggested the curved hilt as he (somehow on top of the list of crazy cool things he did BESIDES being a literal James Bond spy, metal singer and Dracula) was also a fairly practiced duelist.

Count Dooku practiced Form 2 saber style which was the official "duelist" saber style it focused heavily on parrying and ripostes In the legends continuity form 2 fell out of favor after the hyperspace wars due to it being a a poor choice in dealing with blaster fire. After the "fall" of the sith it almost became a forgotten style due to Jedi almost never coming across another saber wielder in their lifetimes. In fact the Jedi often setting their lightsaber dueling training to the wayside in favor of simple blaster deflection was one of Count Dooku's gripes with the Jedi as he saw it as a proof of their continuous decline

With the combination of unique lightsaber and force proficiency Count Dooku is considered one of the most dangerous warriors the Galaxy had ever seen. So great was his mastery even his students the Asajj Ventress and General Grevious were able to defeat Jedi with years of experience above them.

Ironically enough Count Dooku's adherence to his favored style was what lead to his downfall, he had no trouble besting Obi-Wan due to Obi-Wan practicing form 3 which was a defensive saber style. Dooku could easily pick apart the defenses of a form 3 user and strike when their guard was broken. Anakin however practiced form 5 which was much more aggressive once Anakin had tapped into the dark side the duel between the two was lost as Dooku could only recoil and defend and thus he lost his momentum and then his head.
