I live in Canada, which about as north as you can go without it suddenly becoming south again.

My small town has migrant farm workers who come up from Mexico to work in the fields every year. Thus, we also have Mexican restaurants with authentic Mexican meals designed and cooked by actual Mexican people.

Our grocery stores also sell ingredients for Mexican dishes, because Mexican cuisine is popular all over the continent, and beyond. Pico de gallo, pinto beans, fresh tortilla...who doesn’t like these things?

I’ve had “Mexican” food in the American south. It was...uh...interesting. Slathered in cheese, very beef-focused.

Food tradition gatekeepers are the fucking WORST. God forbid someone likes something a different way than you do. Living in Chicago people do it all the time with hot dogs and pizza. Don't get me started on Italian food gatekeeping...
