For my mom, it's gluten. She has celiac disease, and was so ill before she was diagnosed 25 or so years ago that she had no villi left in her small intestine and was dying of malnutrition. Even now, even a small amount of gluten can send her to the hospital. When "gluten free" became a fad, and then a joke, she was terrified to eat out anywhere. People need to just leave others' food the hell alone.

Tangentially related: Years ago one of my coworkers decided to run to Dairy Queen to get treats for all the staff. One of the staff was allergic to peanuts.

The guy who went to get us stuff made two separate orders so that all the things without peanuts would be ordered in one lump, and it was conveyed to the workers at Dairy Queen; that the one person was allergic to peanuts, and that all items ordered were to be made without peanuts. Staff were told why there was to be a second, separate order, and were aware of the peanut allergy before starting, so they agreed to make those items first... Guess who got to have an ED stay paid for by Dairy Queen? Turns out they specifically put peanuts in each of the items he ordered.
