Salt and pepper both!
I met someone who didnt use salt and pepper to cook meat before.. she said my food tasted so good and asked me how i cook. I said salt and pepper.

If I remember correctly it was Anthony Bourdain that said the difference between a home cook and a professional kitchen is they use a ridiculous amount of salt butter and garlic compared to moms cooking
