The red marker one wouldn't be that hard as the marker is partially transparent and avoids a lot of distinguishing features.
That B&W picture though... large parts of the old man's face are missing, he doesn't even have a nose. I can only assume they had additional photo references to draw from to create the face.
Both images are really great and show a lot of skill.
