Try roasting some veggies. Use broccoli, cauliflower, green beans, baby potatoes, squash (either yellow summer squash or zucchini), or carrots. Slice them into bite sized pieces, like 1-1.5 inch pieces, and toss them into a large bowl that has a lid. Dump like 2 tablespoons of olive oil in there along with 2 minced cloves of garlic, a teaspoon or two of salt, and some pepper. Then pop the lid on and shake them shits up until everything is coated.

Then just dump everything onto a baking sheet (bonus points if you put some aluminum foil on it so you don't have to clean as hard later) and slap it into a 350 degree oven for 25 minutes, give them a stir, then put them back in until they get lightly browned, about 30-45 minutes total. Take them out and shove everything in your face.

This takes less than 10 minutes to prep and less than an hour total to make, and it will cost only a couple of dollars to make enough for two or three people.
