Joking aside, you're not actually supposed to put everything in the little bowls too. You can, if you want, and if you have a bunch of prep bowls available. The term for it is mise en place and it's used in commercial and professional cooking to maintain organization, accuracy and efficiency when cooking in a high volume environment.

In cooking videos, it's done to shorten the length of the tutorial. You don't want to sit around and watch them chop up all the veg, measure out the spices and weigh the dry ingredients. They do all of that ahead of time so the video can be a simple procedural clip. It also tends to look nice.

All of that said, you can get small prep bowls and tiny dishes relatively cheap, or even fashion some of your own from cups, larger bowls, or other containers you have around the house. If you're ever cooking a complicated dish, it helps to do all the prep ahead of time, so when it comes to actually cooking, you can focus of the technique and timing and not worry about racing the clock to chop garlic before the onions burn.
