Looking good.Just asked my wife to do some roasties for breakfast. she looked at me as if i had shat in my hands and clapped.

Pro tip: you need to fluff them up a bit before putting them in the oven! :)

After par-boiling and draining the water, put the potatoes back into the pan, put the lid back on and hold it down while you shake the whole pan vigorously for a few seconds. Then put the potatoes into the hot oil/fat and then into the oven.

Ensuring lots of fluffy bits all over gives the potato more surface area - more places for the oil to absorb and crust up, then you’ll get a consistent crunchy crust across every surface, rather than only on the edges.

There will be a fair bit of basically mash from doing this, but make sure not to transfer that into your baking tray. The potatoes on the tray do need to be reasonably well separated to ensure the oil doesn’t just get absorbed into the mashy bits making everything soggy.

Edit: the people mentioning adding flour/breadcrumbs - please no. If you do it properly, there is no need.
